Each year on the first Friday in June, people participate in National Doughnut or Donut Day. This day celebrates the doughnut and honors the Salvation Army Lassies, the women that served doughnuts to soldiers during WWI.

In 1917, the original “Salvation Army Doughnut” was first served by the ladies of the Salvation Army. It was during WWI that the Salvation Army Lassies went to the front lines of Europe. Home cooked foods, provided by these brave volunteers were a morale boost to the troops.

The doughnuts were often cooked in oil inside the metal helmets of American soldiers. American infantrymen were then commonly called “doughboys.” A more standard spelling is donut.

Hey Keto Mama: Strawberry Donuts

INGREDIENTS

 
For the Donuts
 
 
• 2 Cups Blanched Finely Ground Almond Flour
• 2 Tablespoons Unflavored Protein Powder
• 2 Teaspoons Baking Powder
• 1 0.3oz Packet Sugar-Free Strawberry Jell-O Powder
• 1/2 Cup Butter
• 2 Ounces Cream Cheese
• 1/4 Cup Sour Cream
• 1 1/2 Teaspoons Vanilla Extract
• 1/2 Cup Erythritol
• 10 Strawberries
• 2 Teaspoons Lemon Juice
• 2 Teaspoons Water
• 2 Egg Whites

For the Glaze

• 4 Strawberries
• 2 Tablespoons Heavy Whipping Cream
• 2 Tablespoons Powdered Erythritol
• 2 Teaspoons Water

DIRECTIONS


For the Donuts 

1. Preheat oven to 350 degrees Fahrenheit. Butter or (or non stick spray) your donut pan and set aside.

2. In a large mixing bowl, combine almond flour, protein powder, baking powder and sugar free strawberry Jello-O powder. Set aside.

3. In a separate bowl, add butter and cream cheese. Microwave for 30 seconds to melt, being careful to not burn the cream cheese. Stir well.

4. Add sour cream, vanilla extract, and erythritol to the butter and cream cheese mixture. Stir well.

5. In a blender, Puree strawberries, lemon juice, and water together until no lumps remain.

6. Add wet ingredients to dry ingredients and stir until very well combined. Then stir in the strawberry puree. Once combined, stir in egg whites until smooth.

7. Scoop batter into a freezer sized Ziploc bag. Twist the end of the bag to remove air then cut off a lower corner, and pipe the batter into a buttered donut pan. You will need 12 donut molds total, so either two 6-donut pans or work in batches.

8. Bake for 12 minutes or until a toothpick comes out of the donuts clean.

9. Cool completely before removing from donut pan. Otherwise the donuts will crumble

For the Glaze
 
1. Put the strawberries, heavy whipping cream and water into the blender then puree. Pour into a small bowl and whisk in erythritol.

2. Remove from blender and brush evenly across donuts. This glaze is more for extra flavor and moisture so it's a little runny.

INGREDIENTS

For the Donuts 

• Nonstick oil for pan
• 4 large eggs
• 1/2 cup unsalted butter, melted (112 grams)
• 3 tablespoons whole milk
• 1 teaspoon stevia glycerite (equals 1/3 cup sugar)
• ¼ cup coconut flour
• ¼ cup natural unsweetened cocoa powder (not treated with alkali)*
• ¼ teaspoon sea salt
• ¼ teaspoon baking soda 

For the Glaze

• 3/4 cup dark chocolate chips
• 1 tbsp avocado oil

DIRECTIONS


 1. Preheat oven to 350 degrees F. Grease 10 silicone donut pan cavities.

2. Whisk together the eggs, melted butter, milk and stevia.

3. Whisk in the coconut flour, cocoa powder, salt and baking soda.

4. Fill the donut pan cavities 3/4 full. Bake until set and a toothpick inserted in donuts comes out clean, about 17 minutes.

5. Place the pan on a cooling rack and allow to cool for 15 minutes.

6. Meanwhile, in a shallow bowl, melt the chocolate chips in the microwave, in 30-second intervals, stirring after each session. Stir in the avocado oil.

7. Gently run a knife around the edges and center of each donut. Carefully release the donuts from the pan. Dip each donut into the glaze. If desired, sprinkle with toppings such as shredded coconut or chopped nuts, or drizzle with melted peanut butter.

8. Cool the keto chocolate donuts until the glaze sets, about 30 minutes, then serve.

Green and Keto: Cinnamon Crumb Cake Keto Donuts

Ingredients

For the Donuts 

• 1/2 cup coconut flour
• 1/4 cup almond flour
• 1 tbsp flaxseed meal
• 1 tsp baking powder
• 1/4 tsp salt
• 1 tsp cinnamon
• 1/4 tsp nutmeg
• 2/3 cup erythritol sweetener, like Swerve
• 6 eggs, large
• 1/2 cup butter, melted
• 1 tsp vanilla

For the Crumble

• 1/2 cup almond flour
• 1/4 cup chopped pecans (optional)
• 1 tbsp erythritol sweetener, like Swerve
• 1 pinch salt
• 2 tbsp butter, softened

 

Directions


For the Donuts

1. Preheat the oven to 350 degrees F. Spray a donut pan with no-stick spray.

2. In a medium bowl, whisk together the almond flour, coconut flour, flax meal, baking powder, sweetener, salt, cinnamon, and nutmeg. Then, set aside.

3. In another bowl, whisk together the eggs, melted butter, and vanilla until smooth. Pour the wet ingredients into the dry ingredients and mix until just combined.

4. Spoon the batter into your donut pan, filling each cavity ¾ of the way full.

For the Crumble

1. In a small bowl, stir together the almond meal, sweetener, and salt. Mix in the butter. Stir until all of the flour is incorporated and the mixture is moistened.

2. Sprinkle the topping on each donut, using your fingers to break up the mixture until it’s evenly distributed.

3. Bake for 12-15 minutes or until the edges are lightly browned. Allow donuts to cool down until you can handle them.
