Emily (@emily_in_keto) has been keto for 3 years and is down 75 pounds. But for Emily, keto has been more than just a weight loss diet. It's helped her feel strong, independent, and has given her the courage to pick herself up whens she gets knocked down.

Q1How did you feel when you first started keto?
I felt so confident. I did the research, I put in the time to learn what I was doing, and had a support system in place. That was the first time I EVER had all those things. I believe it my was confidence within myself that made me so successful.
Q2Were there any times that you wanted to quit? What did you do to stay motivated when it got hard?
Several times. I have had breaking points where I binged and fell off the wagon. But what brings me back is how well I feel when I am 100% keto. I have energy, I am not thinking of food 24/7 like I had been my whole life, I felt good inside and out. It is that feeling that I chase and brings me back. I stayed motivated by reminding myself how far I have come. When I feel like quitting I tell myself that the taste of food is a feeling that lasts a moment, but the feeling of a healthy body lasts a lifetime.
Q3What advice would you give to someone who is just starting keto?
Take your time to do your research. Social media may make keto seem like an easy thing to just start, but there is a lot that goes into it! Once you do your research, write it all down so you can look back on it. I used a journal to have this always accessible. I also used it as a form of accountability. Finding a way to keep yourself accountable, whether a journal, instagram page, blog, a friend, you name it! It will help you go so far
Q4What is your favorite way to stay active?
Before I started keto, I could barely run a half mile. Once I started losing weight, I realized how much I loved how my felt after running! I love to run outdoors, as well as weight lifting in the gym. Feeling fit and strong is such an amazing feeling.
Q5What are your go-to keto recipes?
I have so many! I post daily on my social media of what I eat and my favorite recipes. My "breakfast" is usually bulletproof coffee, or I fast! For lunch I love to meal prep soups/chilis, lettuce wraps, or casseroles. Dinner I make a protein with veggies, such as steak and asparagus, chicken and cauliflower rice, etc! For dessert I opt for low carb ice cream, homemade fat bombs, or a handful of low carb chocolate chips!

Q7What book have you reads that's had a positive impact on your life?
I read a book called, "Girl wash your face" by Rachel Hollis. I have so much self doubt that I am doing the right thing and that I am on the right path. This book gave me a lot of peace about my journey.
